These Ginger Cashews have a great, light flavor. Your house will smell wonderful as they bake too. Garam masala is an Indian spice mix that should be in your grocer's spice aisle.
2 cups lightly salted cashews
1 tablespoon butter, melted
1 tablespoon grated fresh ginger
2 teaspoons garam masala
Preheat oven to 300ยบ. Toss together cashews, butter, ginger and garam masala in a medium bowl. Line a shallow baking sheet with foil, spread nuts on sheet. Roasted about 20 minutes, stirring every 5 minutes.
