Oktoberfest: Boiled Bacon Dressing

In German, this is called Warme Specksosse and is often used over potatoes or string beans. But for salad, pour this Boiled Bacon Dressing over any combination of salad ingredients you like. Here it is often served over simple iceberg lettuce. Don't try to make this dressing ahead as it will solidify in the fridge.

4 sliced bacon
1/2 teaspoon salt
1 beaten egg
1 cup cream
1/2 cup sugar
1 tablespoon cornstarch
1/4 cup vinegar
Fry bacon and reserve along with bacon fat. In a sauce pan over medium heat, mix sugar, salt and cornstarch. Add beaten egg and vinegar and mix well. Add cream, bacon and fat. Cook to desired thickness. Serve hot over salad greens. Yield: 8 servings
